January 2019 | Sofitel Philippine Plaza Manila starts the year with a voyage to the Mediterranean shores in a week-long gastronomic journey featuring dishes from Morroco, Spain, South of France, Italy, Greece and Lebanon starting on the 21st of January and culminating in a medley of these specialties in Le Grand Sunday Brunch on the 27th of January 2019.
The Mediterranean Food Festival features a colourful and sumptuous feast inspired by fresh and distinct flavours spanning a variety of cultures and cuisines. Each day presents a thematic culinary production inspired by the finest selection from the featured countries in this week-long presentation.
Firstly, Spiral take gastronomes to the exotic land of Morocco with staples abound with distinctive spices and flavour combinations. National delicacies are presented including Chicken Tajine, Chicken Pastilla, Seafood Couscous, Tabbouleh and Chebakia.
The journey continues in Spain known for its iconic flavour profile heavily influenced by history, geography and climate and its revolutionary culinary techniques. Featured quintessential specialties include Paella, Tortilla de Patata with Chorizo, Chochinillo Asado, Gazpacho and a tasteful variety of tapas.
Moving on to its neighbouring country of France, Spiral presents the fresh flavours of Provence and Cotê d’Azur brought about by the heady warmth of the sun and sea. Guests get a taste of the classic Bouillabaisse, Pissaladiere, Provençal Beef Daube, Anchoiade, Salad Niçoise, and light, tasty desserts like Tarte Tropezienne and Lavender Crème Brulee.
Travelling over to the land of Italy, deemed as having one of the world’s longest-standing food cultures, zesty and richly-diverse signature dishes include the Veal Saltimbocca, Italian Grilled Fish, Caprese Salad, Beef Lasagna, a wide antipasti selection and dessert favorites like Tiramisu and Panna Cotta.
Continuing on to the flavours of Greece with a culinary landscape that is a culmination of thousands of years of history, a delightful spread of healthy yet tasty dishes await including Moussaka, Gyros, Fasolada, Tzatziki, Greek Salad and delightfully sweet desserts like Galaktoboureko and Amygdalota. Last but definitely not the least, the culinary journey crosses the Mediterranean sea to the land of Lebanon. With its wide variety of savory specialties that has been developed through its rich history and influenced by ancient Ottoman and French cultures, the special Lebanese selection includes the exotic flavours of Lamb Kofta, Sayadiyah, a spread of mixed Lebanese grilled favorites, Tabbouleh, Hummus Beiruti with Meat, and signature desserts like Baklava, Umm Ali, Cheese Kunafa and Halawet el Jibn.
LE GRAND SUNDAY BRUNCH
The week-long gastronomic celebration culminates in Le Grand Sunday Brunch featuring all Mediterranean highlights elevated by free-flowing champagne. Gourmands are serenaded by Spiral’s live musical entertainment while young VIPs are delightfully engaged with colorful interactive programs and animations.
